Full Recipe for Pumpkin Pop-Tarts with Cinnamon Icing

Ingredients

  • For the Pumpkin Pop-Tarts:
  • 1 package (2 sheets) thawed puff pastry (379 g package)
  • 1 cup pumpkin puree (canned or fresh)
  • ½ cup brown sugar
  • ½ tsp ground cinnamon
  • ½ tsp pumpkin pie spice
  • ¼ tsp ground cloves
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 1 egg whisked
  • For the Cinnamon Icing:
  • 1 cup powdered sugar
  • 1/2 tsp cinnamon
  • 1 1/2 tbsp cream or milk
  • 1/2 tsp pure vanilla extract

Directions:

  1. Preheat oven to 350 F.
  2. On a lightly floured surface, roll out the sheets of puff pastry to make two large 12×12-inch squares. Cut each square in half horizontally. Then cut into thirds to create 6 even rectangles for each square. You should end up with a total of 12 rectangles
  3. To make the filling, stir together the pumpkin, brown sugar, and all the spices until well combined.
  4. Carefully scoop the pop-tart filling onto 6 of the rectangles, leaving about a 1/2 inch border around the edge. Use about 1-2 tbsp of filling for each pop-tart.
  5. Brush the egg wash along the border of the pop-tarts and place the remaining rectangles on top, using your finger to press along the edges to create a seal.
  6. Use a fork to poke a few holes on top to allow ventilation while baking and use the fork to crimp along the edges of each pop-tart.
  7. Brush the remaining egg wash across the top of each pop-tart.
  8. Place on a baking tray lined with parchment and bake for about 25-30 minutes or until golden brown.
  9. While the pop-tarts cool, prepare the icing by combining the powdered sugar, cinnamon, cream, and vanilla in a small mixing bowl.
  10. Drizzle the icing across the top of the pop-tarts, top with sprinkles and enjoy!
